Ingredients

  • 300g shrimp
  • 250g andouille sausage
  • 300g long-grain rice
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 celery stalks
  • 1 can tomatoes
  • 3 cups stock

Method

  1. 1Brown the sausage, then soften the trinity in the fat.
  2. 2Add tomatoes, rice, and stock and bring to a simmer.
  3. 3Cover and cook until the rice is nearly tender.
  4. 4Stir in the shrimp and finish until just cooked.
