Ingredients

  • 4 catfish fillets
  • 2 tbsp paprika
  • 1 tsp cayenne
  • 1 tsp thyme
  • 1 tsp garlic powder
  • 60g butter, melted
  • Lemon wedges
  • Salt

Method

  1. 1Mix the Cajun spice blend and coat the fillets all over.
  2. 2Heat a cast-iron pan until smoking and add the butter.
  3. 3Sear the fish hard on both sides until a dark crust forms.
  4. 4Finish with a squeeze of lemon.
