Ingredients

  • 5kg whole brisket
  • 3 tbsp coarse salt
  • 3 tbsp coarse pepper
  • Oak wood
  • Butcher paper

Method

  1. 1Trim the brisket and coat in equal parts salt and pepper.
  2. 2Smoke over oak at low heat until the bark sets.
  3. 3Wrap in butcher paper and continue until probe-tender.
  4. 4Rest for at least an hour, then slice against the grain.
