Ingredients

  • 2 racks baby back ribs
  • 3 tbsp brown sugar
  • 2 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp salt
  • 1 tsp cayenne
  • 250ml barbecue sauce
  • Apple juice for spritzing

Method

  1. 1Pull the membrane and coat the ribs in the spice rub.
  2. 2Smoke low over indirect heat, spritzing with apple juice.
  3. 3Wrap in foil to tenderize, then unwrap to firm the bark.
  4. 4Glaze with barbecue sauce and finish until sticky and caramelized.
