Ingredients

  • 3kg pork shoulder
  • 3 tbsp paprika
  • 2 tbsp brown sugar
  • 1 tbsp mustard powder
  • 300ml cider vinegar
  • 1 tbsp chili flakes
  • Salt and pepper
  • Wood chunks

Method

  1. 1Rub the shoulder all over and let it sit overnight.
  2. 2Smoke low and slow until the bark is dark and the meat probes tender.
  3. 3Rest wrapped, then pull into shards.
  4. 4Toss with a tangy vinegar mop before serving.
