Steak au Poivre

Pan-seared steak crusted in cracked pepper with a brandy-cream pan sauce.

Ingredients

  • 2 thick steaks
  • 2 tbsp cracked peppercorns
  • 30g butter
  • 60ml brandy
  • 150ml cream
  • 1 shallot, minced
  • Beef stock
  • Salt

Method

  1. 1Press cracked pepper into the steaks and sear hard in butter.
  2. 2Rest the steaks while you soften the shallot in the pan.
  3. 3Deglaze with brandy off the heat, then add stock and cream.
  4. 4Reduce to a silky sauce, season, and spoon over the sliced steak.
