Ingredients

  • 8 bone-in chicken thighs
  • 150g bacon lardons
  • 250g mushrooms
  • 200g pearl onions
  • 500ml red wine
  • 2 tbsp flour
  • 2 cups chicken stock
  • Fresh thyme

Method

  1. 1Brown the chicken in rendered lardons and set aside.
  2. 2Saute the mushrooms and onions, then dust with flour.
  3. 3Deglaze with red wine, add stock and thyme, and return the chicken.
  4. 4Braise gently until the chicken is tender and the sauce is glossy.
