Classic Tiramisu

Espresso-soaked ladyfingers layered with mascarpone cream and cocoa.

Ingredients

  • 300g ladyfingers
  • 500g mascarpone
  • 4 eggs, separated
  • 100g sugar
  • 300ml strong espresso
  • 2 tbsp cocoa powder
  • Pinch of salt

Method

  1. 1Whisk the yolks and sugar, then fold in the mascarpone.
  2. 2Whip the whites to soft peaks and fold them in for a light cream.
  3. 3Dip the ladyfingers in espresso and layer with the cream.
  4. 4Dust with cocoa and chill for several hours before serving.
