Ingredients

  • 600g chicken thighs
  • 4 tbsp soy sauce
  • 3 tbsp mirin
  • 2 tbsp sugar
  • 1 tsp ginger
  • 400g cooked rice
  • Sesame seeds
  • Sliced scallions

Method

  1. 1Simmer soy, mirin, sugar, and ginger into a teriyaki glaze.
  2. 2Sear the chicken until golden and cooked through.
  3. 3Glaze the chicken in the sauce until lacquered.
  4. 4Slice over rice and finish with sesame and scallion.
