Chicken Pad Thai

Stir-fried rice noodles with chicken, egg, and peanuts in a sweet-tangy sauce.

Ingredients

  • 250g rice noodles
  • 300g chicken, sliced
  • 2 eggs
  • 100g bean sprouts
  • 3 tbsp tamarind paste
  • 2 tbsp fish sauce
  • 2 tbsp palm sugar
  • Crushed peanuts

Method

  1. 1Soak the noodles until pliable.
  2. 2Stir-fry the chicken, then push aside and scramble the eggs.
  3. 3Add noodles and the tamarind-fish sauce mix and toss over high heat.
  4. 4Fold in sprouts and finish with crushed peanuts and lime.
