Ingredients

  • 100g fine bulgur
  • 2 bunches parsley, chopped
  • Handful of mint, chopped
  • 3 tomatoes, diced
  • 4 spring onions, sliced
  • Juice of 2 lemons
  • Olive oil
  • Salt

Method

  1. 1Soak the bulgur in hot water until tender, then drain well.
  2. 2Finely chop the herbs and dice the tomatoes.
  3. 3Combine bulgur, herbs, tomatoes, and onions.
