Ingredients

  • 5 fresh eggs
  • 30g butter
  • 2 tbsp creme fraiche
  • Snipped chives
  • Sea salt
  • White pepper
  • Buttered toast to serve

Method

  1. 1Beat the eggs with a pinch of salt until uniform.
  2. 2Melt butter in a nonstick pan over low heat and add the eggs.
  3. 3Stir constantly and slowly, pulling the curds in from the edges.
  4. 4Pull off the heat while still glossy, fold in creme fraiche and chives, and serve on toast.
