Ingredients

  • 2 thick slices sourdough
  • 1 ripe avocado
  • 2 fresh eggs
  • 1 tbsp white vinegar
  • Lemon juice
  • Chili flakes
  • Flaky salt
  • Olive oil

Method

  1. 1Toast the sourdough until deeply golden and drizzle with olive oil.
  2. 2Smash the avocado with lemon juice and a pinch of salt, then spread thickly.
  3. 3Poach the eggs in barely simmering vinegared water until the whites set.
  4. 4Set an egg on each toast and finish with chili flakes and flaky salt.
