Ingredients

  • 500g bread flour
  • 400g water
  • 10g salt
  • 5g instant yeast
  • 80ml extra-virgin olive oil
  • Fresh rosemary sprigs
  • Flaky sea salt

Method

  1. 1Stir flour, water, salt, and yeast into a wet, shaggy dough and let it rise until doubled.
  2. 2Pour oil into a sheet pan, transfer the dough, and fold it onto itself a few times.
  3. 3Rest, then dimple all over with oiled fingertips and press in rosemary.
  4. 4Shower with flaky salt and bake until deep golden and crisp at the edges.
